On the menu for next week we have Toasted Cheese Sandwiches with bread provided by The Artisan's Oven of Springfield MO and cheese being Grass Fed Non-GMO Along with Golden Split Pea Soup! YUMMMMMY!!

Or, would like a double order of the soup and sandwich? This week it is available for $9 each. This gives you the cheese, bread and split peas necessary to make the recipe below.

- The $10 Fruit Salad add on for next week contains 2 Ambrosia Apples, approximately a pound and a half of bananas, two navel oranges, two bartlett pears and an 8 oz STRAWBERRY.

TERRELL CREEK Goat Cheese is BACK! They couldn't provide all the cheese for this coming weeks boxes with toasted cheese. But, they can fill individual orders. I'm not sure about "all" the flavors, but know that the plain and herb and garlic along with cranberry pecan 'should' be available for delivery next week.

Golden Split Pea Soup
Total Time: 1 hr 35 min Prep: 20 min Cook: 1 hr 15 min Yield: 4 to 6 servings
2 tablespoons unsalted Grass Fed Non-GMO butter
1 onion, sliced
3 stalks celery, diced
2 carrots, peeled and diced
Salt and white pepper to taste (black pepper will work as well... you will just 'see' it in the soup. We like to use an Adobo Seasoning Blend)
1/2 teaspoon turmeric
8 cups chicken stock (or combination water and stock) (I typically will use just water)
2 cups dried yellow split peas
2 medium potatoes, peeled and diced
1 ham hock (optional)
Dark bread croutons, for garnish (optional) *** I like to top our Split Pea Soup with Microgreens by Blue Heron and a bit of Herb and Garlic Goat Cheese by Terrell Creek! ***
Brown mustard (optional)
Melt butter over medium-low heat in a large stockpot or Dutch oven. Cook onion, celery and carrots with salt and pepper until onion is soft, about 7 to 10 minutes. Add the turmeric, stock, peas, potatoes, and ham hock, and simmer, covered, about 1 hour. Remove the ham hock. Puree soup in a blender or food processor until smooth. Return to clean pot, and adjust the seasonings. Serve immediately in flat soup dishes with wide (3-inch) rims, garnished with dark bread croutons. Place brown mustard on the rims of the bowls, and take a little mustard with each spoonful of soup.
